A non-RAID system might be able to handle 3 cameras like that, and to have 14 days retention it would need to have 18 TB of storage. Sometimes you can get the stream coming that is 5MP 30FPS, but that single camera is now sending constant data of about 24Mbps. You start running into bandwidth limits with IP cameras really quickly. The systems I build use H.264 and on average record 4CIF 30FPS on analog cameras and whatever the IP camera can send for IP.
